Conceived as an evolution of the Domaine’s gastronomic experience, this transformation places La Brasserie Le Club at the center of the dining offer, with a renewed proposition from lunch through dinner.
At the crossroads of a contemporary brasserie and a fine dining restaurant, the venue charms with its seasonal cuisine, local produce, and exceptional setting between nature, golf course, and château. An ideal destination for a scenic lunch or a refined dinner at the gateway to Brittany.
A LIVING CUISINE

Driven by the vision of Chef Filipe Silvestre, the cuisine at La Brasserie Le Club reflects a sincere and committed approach, guided by the rhythm of the seasons and respect for living things.
At the heart of the Domaine, the permaculture kitchen garden, carefully maintained by the gardeners, becomes a daily source of inspiration. Fruits, vegetables, and aromatic herbs are harvested throughout the seasons, giving rise to a cuisine that is fresh, precise, and deeply rooted in its environment. “With my team, we are committed to making every meal a sincere moment, grounded in nature and the local territory,” explains Filipe Silvestre.
This approach extends through a rigorous selection of local producers and a strong commitment to short supply chains. In a virtuous cycle, organic waste is repurposed and reintegrated into the Domaine’s natural ecosystem, notably through the kitchen garden and the henhouse.

LUNCH: A BRIGHT INTERLUDE FACING NATURE
At lunchtime, La Brasserie Le Club embraces the spirit of a vibrant and accessible house.
Set facing the putting green, behind large bay windows, the eye drifts across a moving, almost painterly landscape. The light shifts, the foliage dances, and the meal becomes a suspended moment in time.
The generous and convivial cuisine perfectly complements a day at the Domaine, after a round of golf, a walk, or simply to savor the moment.
As soon as the warm days arrive, the terrace extends this experience outdoors. Under parasols, in the sun or shade, lunches linger gently, while summer evenings are enhanced by an elegant and discreet musical program.
DINNER: A MORE INTIMATE AND GASTRONOMIC EXPERIENCE
As night falls, La Brasserie Le Club shifts pace. The atmosphere becomes more subdued, tables are dressed, and the lighting softens. The space gains intensity without ever losing its gentleness.
The cuisine evolves as well. More daring and more precise, it is expressed through three or four course menus, as well as an à la carte selection with gastronomic accents.
Among the creations, certain signatures stand out:
— oysters, apples from Brière, seaweed and oyster sauce with spirulina
— line caught seabream Grenobloise style, delicate and balanced
— Vendée rabbit saddle with grape must, deeply indulgent
— and vegetable plates inspired directly by the kitchen garden
Each dish is conceived as a composition, between terroir and creativity.
And when dinner comes to an end, the experience continues naturally. Guests settle into large sofas, a drink in hand, by the fireplace. Time slows once again.

Mornings at the Domaine remain unchanged and just as memorable. Breakfast, served at Le Montaigu with breathtaking views over the lake and the château, remains a signature moment recognized by regular guests.
Throughout the rest of the day, Le Montaigu reinvents itself day after day to host events and private gatherings, seamlessly extending the art of hospitality that defines the Domaine. This new organization reflects a clear ambition: to offer a more readable, more embodied culinary experience, while remaining true to the DNA of Domaine de la Bretesche, a place where nature, generosity, and excellence meet in harmony. Here, gastronomy is not only told. It is lived.
